A delicious vegan brunch recipe

Brunch is a popular meal with both young and old, and this dish with zesty orange is a treat for adults and children alike. Marinated oranges add extra pizzazz to these tasty crepes.
How to make vegan Crepes?
The milk and egg of conventional crepe recipes are easily replaced. Instead of cow´s milk, use a plant-based milk of choice, such as almond milk. For the batter you need finely ground chia seeds and water (a good egg substitute). Not only do these crepes taste good, they are also simple and easy to make.
Crepes with marinated oranges and cocoa sauce
makes about 10 crepes
- 2 dessert spoon (dstspn) finely gound chia seeds
- 6 dstspn warm water
- 140 g light spelt flour
- 60 g buckwheat
- 2 dstspn cocoa powder
- 1 pinch salt
- 2 dstspn olive oil
- 1 tsp vanilla extract
- 2 dstspn maple sirup
- 3 ml plant-based milk
- 1 ml mineral water
- 2 organic oranges, segmented and orange zest
- 1 dstspn maple syrup
- 1/2 tsp cinnamon powder
- 50 g vegan dark chocolate
- Coconut oil for the pan
Method
Mix the chia seed flour with the warm water. Let it thicken into a gel in the fridge for 10 minutes. Mix the dry ingredients in a bowl. In a separate bowl, whisk together the wet ingredients, including the chia gel. Then combine the wet ingredients with the dry ingredients, and let stand 15 minutes.
Preheat the oven to 60°C (no fan). Mix any juice from the orange fillets with the maple syrup and cinnamon. Add the orange segments to this mixture and allow to marinate. Over medium heat, spread a thin layer of coconut oil on a non-stick pan. Use a paper towel to remove any excess oil. Pour 8 cl (approx. 5 dstspn) of batter into the centre of the pan. Swirl the pan (or use a batter spreader) so the batter evenly coats its entire surface. Cook the crepe on both sides for about 2 minutes. Keep crepes warm in the oven while you cook the rest of the batter in the same way.
Melt the dark chocolate over a waterbath. To serve, arrange the crepes flat in a stack or folded into quarters on the plate. Top with marinated oranges, a sprinkle of orange zest and a drizzle of melted chocolate.
